Recipes are like a good story. Every family has a great one that they love. Louisianans have many different ways to cook even the easiest of meals. My Grandmother cooked the best cajun cuisine that I have ever tasted. She always told me that she remembers what goes in every dish. She always used a different combination of spices and seasonings. When I asked her how do you measure your spices, she would just tell me that "I just used a pinch of this and a pinch of that." However, the dish was always great and always tasted the same. Most Louisiana Chefs have different ways to cook the same dish. This directory is for anyone that would want to try and make a great Louisiana dish.
