Recipes are like a good story. Every family has a great one that they love. Louisianans have many different ways to cook even the easiest of meals. My Grandmother cooked the best cajun cuisine that I have ever tasted. She always told me that she remembers what goes in every dish. She always used a different combination of spices and seasonings. When I asked her how do you measure your spices, she would just tell me that "I just used a pinch of this and a pinch of that." However, the dish was always great and always tasted the same.
